Home-made Ice Cream


Ingredients:
3 ripe bananas, pureed, frozen
450ml Milac
100g castor sugar
1/2 tsp vanilla essence
Method:
In a blender, on low, add bananas, 2min, then add milac, blend 3min! Use a spatula, mix well, then blend on medium, 3min, add sugar & vanilla, blend 1min on high! Freeze +3hours, preferably overnight! For chocolate add 2 tbsp cocoa! There's lots of flavors can be achieved using base mixture! Enjoy!

Chicken Kalya!


3 chicken fillet, cubed
Quarter onion, sliced
2 potatoes, cut in quarters nd fried
Marinate chicken with foll:
1 & 1/2 tomato, grated
Quarter cup sour milk
2tsp TCC Chilli powder
1 tsp dhania jeeru
1/4 tsp tumeric
2tsp TCC Special blend
2tsp TCC Tandoori Masala
2tsp TCC Green Chutney
1tsp Ginger
1tsp Garlic
1tsp lemon juice
Fry onions in olive oil until brown
Add marinated chicken
Add the fried potatoes when cooked
Garnish with dhania

Sticky Wings!



Ingredients:
18 chicken wings or drumettes
100ml TCC Steakhouse marinade
2 tbsp TCC Special blend
2 tsp TCC Chilli powder
Salt
3 tbsp smooth apricot jam
100ml orange juice
Method:
Place chicken wings in a shallow oven dish, season with salt! Grill +-5min until browned! Reduce oven temperature to 160ºC! Warm remaining ingredients together in a pot, combined well & thickened! Pour onto the wings to coat them completely! Bake 20min! Enjoy!

Shaahi Vegetable Masala

TCC - Shaahi Vegetable Masala!


Ingredients
3 tbsp vegetable oil
200g cauliflower florets
1 medium onion, chopped
2 courgettes, sliced
1 red pepper, diced
1 green pepper, diced
100g peas
200g chopped tomatoes
75ml water
2 tbsp TCC Special blend
1 tsp TCC Chilli powder
1 tbsp chopped fresh coriander
Method:
Heat oil in a pan, fry onion for a few minutes! Add cauliflower, sear for a minute or two!  Add remaining vegetables, cook for a further 5min! Add spices, tomatoes & water, partially cover, cook for 15min, stirring occasionally! Add half of coriander & turn off heat! Garnish with remaining coriander! Serve with rotis/rogni naan!

TCC Prawn Masala




Ingredients:
300g Prawns, deveined
2 tbsp oil
2 tbsp TCC special blend
1 tsp TCC chilli powder
2 tbsp TCC mix masala
1/4 tsp honey
1 tbsp lemon juice
1 small onion, chopped
100ml tomato paste
Method:
Combine all powdered spices, honey & lemon juice!Marinate Prawn for 3 hours, preferably overnight! Heat oil, stir fry onions for a few minutes! Add tomato paste, stir few seconds, then add the Prawn, mix well, cover& cook for 8min, lower heat, toss, stir, simmer for 5min! Serve with rotis or rice!

CHicken with Zaatar


Ingredients
1 free-range chicken, divided into quarters (backbone discarded), about 4 lb
2 red onions, thinly sliced
2 garlic cloves, pressed or crushed
4 Tbsp olive oil, plus more for drizzling
1 tsp allspice
1 tsp cinnamon
1 Tbsp sumac
1 lemon, thinly sliced
scant 2 cups chicken stock or water
1 1/2 tsp salt + more to taste
1 tsp freshly ground black pepper
2 Tbsp za’atar
generous 1/4 C pine nuts
4 Tbsp flat-leaf parsley, chopped

The preparation:

Marinate – In a large bowl, mix onions, garlic, olive oil, spices (except the za’atar), salt and pepper and stock or water. Add the chicken and toss to combine. Leave in the fridge to marinate for a few hours or overnight.

Prepare – Preheat the oven to 400 degrees. With your hands, transfer the chicken, onions and lemon to a rimmed baking tray large enough to accommodate the chicken, skin-side up, in a single layer and spaced apart.

Season – with salt and pepper. Drizzle a bit of the marinade over all. Sprinkle with za’atar.

Roast – for 30-40 minutes until the chicken is browned and cooked through, or 165 degrees internal temperature. (If you prefer crispy skin, run the chicken under the broiler for a few minutes; watch carefully to avoid overcooking.)

Serve & Enjoy – Meanwhile, toast the pine nuts over moderate heat, stirring, until they turn golden brown. Transfer the hot chicken and onions to a serving plate and sprinkle with parsley, pine nuts and a drizzle of olive oil. Discard the lemon or leave as garnish. Sprinkle with a bit more za’atar and sumac, if desired

Banana Custard



Ingredients:
3 bananas
200g icing sugar
250g mascarpone cheese
250ml Milac gold
5ml vanilla essence
12 strawberries
Method:
Combine 3 bananas with icing sugar & vanilla, whisk until smooth! Set aside in fridge, 5min! Soften mascarpone cheese in a blender, fold in milac, whisk well! Add in banana mixture! Combine well! Top with strawberries & dust with abit of icing sugar! Enjoy!

ingredients:
750g lamb
2 onions
2 tomatoes
4 potatoes
oil for frying
1 tsp TCC tumeric powder
2 tbsp TCC special blend
2 tbsp TCC mix masala
1 tsp TCC chili powder
2 tsp lemon juice
Fresh coriander
Method:
Add all spices& lemon juice to meat! Mix well, set aside!Heat oil in saucepan, fry onions till golden brown! Add meat, cook for 2min while stirring! Add tomatoes simmer 10min! Add potatoes, cook 10min until done! Garnish with coriander! Enjoy!

TCC Masala Mushroom

TCC Masala Mushroom!

Ingredients:
250g button mushrooms chopped or halved
100g tomato puree
3 tbsp TCC special blend
2 tbsp TCC mix masala
1 tsp sugar
1 tsp vinegar
1 tbsp soy sauce
1 tbsp TCC garam masala
3 tbsp flour
2 tbsp corn flour
water as required
salt as required
oil as required
For garnish:
few curry leaves
Method:
Combine all ingredients (except mushrooms&oil), mix well! Batter should be of medium consistency! Add in mushrooms, coat well, leave aside, 5min! Deep fry until golden brown and crisp on all sides! Serve with chutney!

Chocolate Paratha!

Another recipe for Wonder dough!

Please don't attempt this with normal dough or roti as it will mess your tawa!

Roll out like roti! Spread choc chips on one, cover with another rolled circle!
Seal edges or twist with fingers to give a shape and seal properly! Place on tawa over high heat! Spread some ghee! Fry until brown specks appear & cooked from both sides! Optional - Drizzle some chocolate syrup or grated chocolate on top!

Chicken / Mutton Biryani!


Ingredients:
1kg basmati rice
2kg mutton or chicken
500g lentils
10 tbsp TCC biryani masala
4 tbsp TCC special blend
1 tbsp TCC garam masala
½ g saffron
8 fresh green chillies, slit
500ml plain yoghurt
2 large tomatoes, grated
3 tbsp lemon juice
8-10 medium potatoes, halved and pierced
1 ½ cups cooking oil
6 medium onions, finely sliced
1 green Dhania, chopped
1 25g butter
Method:
Fry onions until golden brown & crispy! Remove and drain! In oil, fry potatoes golden, set aside! Boil washed lentils in salted water until cooked! Wash, drain and set aside! Boil washed rice and a few strands of saffron, for 5mins only! Drain rice in colander! Place remaining saffron in a dry pan and heat! Add to meat, all masalas&lemon juice! Leave aside 20min! Add yoghurt, tomatoes, ¾ of fried onions, green chillies, green dhania & 2/3 of saffron water!

In a large flat bottomed pot, place the oil that was used for onions & potatoes!Sprinkle a handful of lentils over the base of pot! Arrange meat over the lentils! Cover with remaining lentils, then potatoes, followed by rice! Decorate with the remaining fried onions, sprinkle with saffron water and dot with butter!Sprinkle 1 cup of water!Tightly seal pot with lid, place on high heat for 10mins! Once it starts to sizzle, lower heat, simmer for 1hr! For 8-10 people!

Shaahi Murghi Masala!


Ingredients:
500g Chicken pieces
1 green pepper, cubed
1 Onion, chopped
250ml Tomato Puree
2 tbsp dessicated Coconut
1 tsp TCC Chilli powder
1 tbsp TCC special blend
1 tsp TCC mix masala
1 tsp TCC turmeric powder
Coriander (garnish)
Lemon (garnish)
Oil
Method:
In a bowl, add masalas, mix well! Add chicken Pieces in marinade! Cover, set aside at least 30min! Heat oil in a pan, add chicken, tomato & onion, cook 2-3 minutes on medium! Add pepper! Cover pan with lid, cook on low for 8min, stirring occasionally! Add coconut, simmer, 3 min! Garnish with coriander & lemon! Serve with rotis or rice!

Ingredients:
500g tenderised steak, cut into strips
3 tbsp oil
2 tbsp TCC special blend
1 tsp TCC chilli powder
2 tsp TCC barbecue spice
2 tbsp lemon juice
1 small onion, chopped
2 med green pepper, sliced
1 med red pepper, sliced
2 tbsp mayonnaise
1 tbsp tomato sauce
Method:
Combine all ingredients except oil! Marinate steak for 3 hours! Heat oil, stir fry onions & peppers for a few minutes! Add 1 cup water, add steak, cook until tender! Add sauces, simmer until slightly thick! Serve with chips & rogni Naan!

Shaahi Masala!


Ingredients:
1 kg chicken, Lamb or Beef
1 medium onion, peeled, chopped
1 large tomato, peeled, chopped
1 tbsp TCC special blend
4 tsp TCC mix masala
1 tbsp Ginger&garlic paste
1 tsp TCC turmeric powder
2 tsp TCC garam masala
3 curry leaves
2 tbsp oil
Fresh coriander for garnish
Salt to taste
 

Method:
Heat oil, add onion, curry leaves, fry until light golden brown! Add masala mix, turmeric, special blend, ginger paste & tomato! Cook & Mix into a puree! Add meat, salt to taste, cook on medium heat until meat is tender! Be careful to prevent any burning! When the meat has cooked, add garam masala! Then simmer for a further 10 minutes on a low heat! Garnish with fresh coriander leaves! Serve with rotis, Naan or rice!
