Banana Custard

3 bananas
200g icing sugar
250g mascarpone cheese
250ml Milac gold
5ml vanilla essence
12 strawberries
Combine 3 bananas with icing sugar & vanilla, whisk until smooth! Set aside in fridge, 5min! Soften mascarpone cheese in a blender, fold in milac, whisk well! Add in banana mixture! Combine well! Top with strawberries & dust with abit of icing sugar! Enjoy!

TCC Shaahi Lamb Masala!

750g lamb
2 onions
2 tomatoes
4 potatoes
oil for frying
1 tsp TCC tumeric powder
2 tbsp TCC special blend
2 tbsp TCC mix masala
1 tsp TCC chili powder
2 tsp lemon juice
Fresh coriander
Add all spices& lemon juice to meat! Mix well, set aside!Heat oil in saucepan, fry onions till golden brown! Add meat, cook for 2min while stirring! Add tomatoes simmer 10min! Add potatoes, cook 10min until done! Garnish with coriander! Enjoy!

TCC Masala Mushroom

TCC Masala Mushroom!

250g button mushrooms chopped or halved
100g tomato puree
3 tbsp TCC special blend
2 tbsp TCC mix masala
1 tsp sugar
1 tsp vinegar
1 tbsp soy sauce
1 tbsp TCC garam masala
3 tbsp flour
2 tbsp corn flour
water as required
salt as required
oil as required
For garnish:
few curry leaves
Combine all ingredients (except mushrooms&oil), mix well! Batter should be of medium consistency! Add in mushrooms, coat well, leave aside, 5min! Deep fry until golden brown and crisp on all sides! Serve with chutney!

Chocolate Paratha!

Another recipe for Wonder dough!

Please don't attempt this with normal dough or roti as it will mess your tawa!

Roll out like roti! Spread choc chips on one, cover with another rolled circle!
Seal edges or twist with fingers to give a shape and seal properly! Place on tawa over high heat! Spread some ghee! Fry until brown specks appear & cooked from both sides! Optional - Drizzle some chocolate syrup or grated chocolate on top!

Chicken / Mutton Biryani!

1kg basmati rice
2kg mutton or chicken
500g lentils
10 tbsp TCC biryani masala
4 tbsp TCC special blend
1 tbsp TCC garam masala
½ g saffron
8 fresh green chillies, slit
500ml plain yoghurt
2 large tomatoes, grated
3 tbsp lemon juice
8-10 medium potatoes, halved and pierced
1 ½ cups cooking oil
6 medium onions, finely sliced
1 green Dhania, chopped
1 25g butter
Fry onions until golden brown & crispy! Remove and drain! In oil, fry potatoes golden, set aside! Boil washed lentils in salted water until cooked! Wash, drain and set aside! Boil washed rice and a few strands of saffron, for 5mins only! Drain rice in colander! Place remaining saffron in a dry pan and heat! Add to meat, all masalas&lemon juice! Leave aside 20min! Add yoghurt, tomatoes, ¾ of fried onions, green chillies, green dhania & 2/3 of saffron water!

In a large flat bottomed pot, place the oil that was used for onions & potatoes!Sprinkle a handful of lentils over the base of pot! Arrange meat over the lentils! Cover with remaining lentils, then potatoes, followed by rice! Decorate with the remaining fried onions, sprinkle with saffron water and dot with butter!Sprinkle 1 cup of water!Tightly seal pot with lid, place on high heat for 10mins! Once it starts to sizzle, lower heat, simmer for 1hr! For 8-10 people!

Shaahi Murghi Masala!

500g Chicken pieces
1 green pepper, cubed
1 Onion, chopped
250ml Tomato Puree
2 tbsp dessicated Coconut
1 tsp TCC Chilli powder
1 tbsp TCC special blend
1 tsp TCC mix masala
1 tsp TCC turmeric powder
Coriander (garnish)
Lemon (garnish)
In a bowl, add masalas, mix well! Add chicken Pieces in marinade! Cover, set aside at least 30min! Heat oil in a pan, add chicken, tomato & onion, cook 2-3 minutes on medium! Add pepper! Cover pan with lid, cook on low for 8min, stirring occasionally! Add coconut, simmer, 3 min! Garnish with coriander & lemon! Serve with rotis or rice!

TCC Steak Express!

500g tenderised steak, cut into strips
3 tbsp oil
2 tbsp TCC special blend
1 tsp TCC chilli powder
2 tsp TCC barbecue spice
2 tbsp lemon juice
1 small onion, chopped
2 med green pepper, sliced
1 med red pepper, sliced
2 tbsp mayonnaise
1 tbsp tomato sauce
Combine all ingredients except oil! Marinate steak for 3 hours! Heat oil, stir fry onions & peppers for a few minutes! Add 1 cup water, add steak, cook until tender! Add sauces, simmer until slightly thick! Serve with chips & rogni Naan!

The Chef's Choice Market Day

Shaahi Masala!

1 kg chicken, Lamb or Beef
1 medium onion, peeled, chopped
1 large tomato, peeled, chopped
1 tbsp TCC special blend
4 tsp TCC mix masala
1 tbsp Ginger&garlic paste
1 tsp TCC turmeric powder
2 tsp TCC garam masala
3 curry leaves
2 tbsp oil
Fresh coriander for garnish
Salt to taste

Heat oil, add onion, curry leaves, fry until light golden brown! Add masala mix, turmeric, special blend, ginger paste & tomato! Cook & Mix into a puree! Add meat, salt to taste, cook on medium heat until meat is tender! Be careful to prevent any burning! When the meat has cooked, add garam masala! Then simmer for a further 10 minutes on a low heat! Garnish with fresh coriander leaves! Serve with rotis, Naan or rice!
