Chicken / Mutton Biryani!


Ingredients:
1kg basmati rice
2kg mutton or chicken
500g lentils
10 tbsp TCC biryani masala
4 tbsp TCC special blend
1 tbsp TCC garam masala
½ g saffron
8 fresh green chillies, slit
500ml plain yoghurt
2 large tomatoes, grated
3 tbsp lemon juice
8-10 medium potatoes, halved and pierced
1 ½ cups cooking oil
6 medium onions, finely sliced
1 green Dhania, chopped
1 25g butter
Method:
Fry onions until golden brown & crispy! Remove and drain! In oil, fry potatoes golden, set aside! Boil washed lentils in salted water until cooked! Wash, drain and set aside! Boil washed rice and a few strands of saffron, for 5mins only! Drain rice in colander! Place remaining saffron in a dry pan and heat! Add to meat, all masalas&lemon juice! Leave aside 20min! Add yoghurt, tomatoes, ¾ of fried onions, green chillies, green dhania & 2/3 of saffron water!

In a large flat bottomed pot, place the oil that was used for onions & potatoes!Sprinkle a handful of lentils over the base of pot! Arrange meat over the lentils! Cover with remaining lentils, then potatoes, followed by rice! Decorate with the remaining fried onions, sprinkle with saffron water and dot with butter!Sprinkle 1 cup of water!Tightly seal pot with lid, place on high heat for 10mins! Once it starts to sizzle, lower heat, simmer for 1hr! For 8-10 people!
